Science Learning: Food Drying as a STEM Project

Abstract

Learning under STEM teaching and project work has spread widely but questions still remain about its reproducibility and effectiveness in different Latin American academic contexts. The goal of this work is to describe the performance of engineering students from a rural and urban area, around the manufacture of a dehydrator for food preservation purposes, avoiding the use of refrigeration and to extend the lifetime. A qualitative, descriptive, observational study is carried out, with an analysis of the learning process and the results obtained. Differences are found in the choice of energy source, the product to be dried, and the materials used. Both groups showed empathy, positive attitudes to collaborative work and resilience, and improved their oral and written communication skills. There were differences on the concepts towards renewable energies. They reported having changed their belief towards the complexity of prototyping and its relationship with mathematical models. This work can be a guide for less experienced teachers to develop a STEM project.
